At the heart of Frisco Baking Company is our proprietary wild sourdough mother starter—the same continuous culture first cultivated in 1941. Unlike commercial bakeries that rely on artificial sour enhancers or instant chemical yeasts, our sourdough bread develops its character through time-honored slow fermentation.
Every morning at 621 West Avenue 26, our bakers begin work while the city sleeps. We measure flour, water, and our living mother dough, allowing the natural enzymes to unlock depth of flavor, open crumb structure, and a blistered golden crust that holds up to the demands of professional kitchens.
